The Tenzan Sake Brewery was established in 1875, though the Shichida family's business history in the region dates back to 1861 when they operated a water mill. Currently led by sixth-generation owner Kensuke Shichida, the brewery is situated near the Gion River and utilizes mineral-rich water from the Tenzan mountain system for its production.

Description

This seasonal autumn release is a 'namazume' style sake, which is pasteurized once in the spring and matured over the summer to mellow its profile. It presents an elegant aroma of white flowers, yellow apples, and white peach, with deeper notes of steamed pear, toasted rice, and chestnut. On the palate, it is luscious and full-bodied with a soft, plump mouthfeel, featuring flavours of ripe grape, fig, cashew, and cream. The character is defined by a rich sweetness balanced by subtle lactic complexity and a lingering earthy finish. It has an alcohol content of 17% and utilizes Aiyama rice from Hyogo Prefecture polished to 75%.
