It is crafted by Fukumitsuya Sake Brewery, the oldest brewery in Kanazawa, which was founded in 1625 during the Edo era. Currently run by the 13th-generation owner, the brewery transitioned to a 'Junmai-only' production model in 2001, focusing exclusively on pure rice sake brewed with centuries-old spring water from Mt. Hakusan.
