Tamanohikari Gold Omachi Junmai Daiginjo Sake - 720 ml
Tamanohikari Gold Omachi Junmai Daiginjo originates from the historic Fushimi district in Kyoto, Japan. Founded in 1673 by the Nakaya family, the Tamanohikari Sake Brewing Company is currently led by the 13th generation of the founding family. The brewery is celebrated for its 1964 revival of the 'junmai' tradition, a commitment that led them to become one of the few breweries in Japan dedicated exclusively to the production of junmai ginjo and junmai daiginjo grades.
Description
This ultra premium sake is clear in appearance and is crafted using 100% Bizen Omachi rice, an ancient heirloom strain polished to 50%. The aromatic profile is complex and fruity, featuring notes of fresh rainwater, cherry leaves, wildflowers, and a subtle hint of anise. On the palate, it offers a rich and well-rounded body with a 'super soft' mouthfeel and flavours of sweet rice, persimmon, and rich vanilla. It possesses a deep umami character balanced by a refreshing acidity, concluding with a crisp and clean finish. The alcohol content is 16.2%.
Food Pairing
The robust umami and sophisticated structure of this Omachi sake allow it to pair with a wide array of international and Japanese dishes. It is an excellent match for seafood classics such as sushi, sashimi, smoked salmon, and steamed mussels or clams. Its rich profile also complements heavier fare, including cheese fondue, crab and artichoke dip, and pasta with pesto sauce. For a unique pairing, try it with braised rabbit or savoury snacks like bar mix to highlight its earthy undertones.
