Okunomatsu Junmai Daiginjo Navy Blue - 720 ml

Okunomatsu Junmai Daiginjo Navy Blue - 720 ml

Okunomatsu Junmai Daiginjo Navy Blue originates from Nihonmatsu City in the Fukushima Prefecture of Japan. The Okunomatsu brewery was founded in 1716 and has been under the continuous ownership of the founding family for nineteen generations. The brewery combines centuries of tradition with modern technology, utilizing the natural soft water from the local Mount Adatara to craft its premium sake range.

Description

This sake is clear in appearance and is brewed using a signature sparkling method that retains a subtle, natural effervescence when first opened. The aromatic profile is elegantly balanced, featuring notes of fresh melon, green apple, and white flowers. On the palate, it offers a medium body with a silky texture and flavours of ripe pear and honeydew, supported by a gentle umami backbone. The finish is remarkably clean and crisp, characteristic of the brewery's refined brewing style. It has an alcohol content of 15% to 16% and a rice polishing rate of 50%.

Food Pairing

The elegant and crisp nature of Navy Blue makes it a superb companion for delicate seafood dishes such as fluke sashimi, raw oysters, or steamed sea bass. It also pairs beautifully with lightly fried vegetable tempura or a fresh spinach and citrus salad. For a more savoury match, consider serving it with roasted chicken or mild white cheeses to complement its subtle fruit sweetness. To best appreciate its delicate 'ginjo-ka' aromas, it is recommended to be served chilled in a wine glass.
