Produced by the historic Matsuoka Brewery (established in 1851), Mikado Ginjo is a centerpiece of a brewery renowned for its unique hard-water brewing process. While most premium sakes utilize soft water, Matsuoka uses mineral-rich spring water filtered through the limestone of the Chichibu Mountains, giving their spirits a distinctive "sharpness and roundness". The name Mikado (Emperor) was chosen to represent the brewery's pursuit of the highest quality in sake production.

Description

This premium Ginjo is clear and refined, characterized by a smooth texture and a crisp, refreshing profile. The nose is well-balanced and moderately elegant, offering a classic ginjo bouquet of pear, green apple, and citrus, with subtle notes of lemongrass. On the palate, it is light-to-medium bodied with a rich flavor that avoids being overly heavy. It features a slightly dry crispness and a mellow depth that has been evolved over the brand's 30-year history. It is crafted from high-quality sake rice polished to 60%, a ratio that removes fats and proteins to ensure a clear taste free of distractions. ABV 15%–16%.

The "mild and rich" nature of Mikado Ginjo makes it an exceptionally versatile companion for a variety of cuisines. It is a natural match for vegetable dishes, salted yakitori, and fresh oyster dishes.
