It is produced by Asahi Shuzo, a brewery founded in 1948 that is led by Chairman Hiroshi Sakurai and President Kazuhiro Sakurai. This unique expression was created to support local farmers by utilizing 'Togai' rice—out of grade Yamada Nishiki grains that are typically discarded because they do not meet strict size or shape requirements. By super polishing these 'oddly shaped' grains to an astounding 8%, the brewery transformed a source of economic burden for farmers into a luscious, high end sake.

Description

This sake presents a colorless and transparent appearance but possesses a powerful and concentrated sensory profile. The nose is vivid and aromatic, featuring a complex collection of cantaloupe, white peach, green grape, pear, apricot, and strawberry, with a hint of powdered sugar and rice bran. On the palate, it offers a velvety, soft, and viscous mouthfeel with deep layers of blueberry, lychee, stewed apple, and mochi. While its use of ungraded rice prevents it from being formally classified as a Junmai Daiginjo, it drinks with the density and refinement of a top tier brew. It has an alcohol by volume of 15% and is best enjoyed chilled in a wine glass that widens at the rim to maximize its fragrance.
