Description
Often referred to as the 'Black Label', this premium sake is brewed using high quality Yamada Nishiki rice from the Banshu region, polished down to 40%. It presents an intense aromatic style with a sensory profile featuring refreshing mango, jackfruit, and tropical cassis. On the palate, it is described as soft, round, and highly viscous with a creamy texture reminiscent of 'velvet personified'. The finish is well balanced with integrated sweetness and a refreshing clarity. It has an alcohol content of 16%.
Food Pairing
The clean and elegant structure of this Junmai Daiginjo makes it a superb match for delicate seafood such as sashimi tuna, sea urchin (uni), and pink shrimp. Its tropical notes and soft sweetness also allow it to complement richer dishes like uni pasta or even spicy tantanmen.
