This high-altitude white wine originates from the San Pablo IG in the Tunuyán subregion of the Uco Valley, Mendoza, Argentina. Zuccardi Valle de Uco, led by third-generation winemaker Sebastián Zuccardi, is widely regarded as a global leader in terroir-driven winemaking, having been named "World’s Best Vineyard" for three consecutive years. The winemaking philosophy for the Fósil label is focused on capturing the "mountain identity" of the Estancia San Pablo vineyard, situated at a staggering 1,400 metres above sea level and only 300 metres from the start of the Andes Mountains.

Wine Description

The 2022 Zuccardi Fósil Chardonnay presents a pale yellow colour with greenish reflections. The sensory profile is austere and complex, opening with aromas of green apple peel, lime zest, and chamomile, layered with distinct notes of mountain herbs (such as huacatay) and a subtle pastry backdrop. On the palate, the wine is lean, dry, and intensely mineral, showcasing a chalky texture and "laser-focused" acidity reminiscent of fine Chablis. It is characterized by great energy and a saline finish that highlights the calcareous alluvial soils of its origin. This 100% Chardonnay has an ABV of 13% to 13.5% and was aged primarily in concrete vats (75%), with the remainder in used 500-litre French oak barrels. Notably, it undergoes no malolactic fermentation to preserve its racy, natural acidity.

Food Pairing

The vibrant mineral tension and citrus purity of this Chardonnay make it a sophisticated partner for meaty fish such as turbot, red mullet, or poached grouper. It also pairs elegantly with fresh shellfish, particularly oysters, or light salads featuring pomegranate, mint, and almonds. For a cheese course, opt for fresh goat cheese (chèvre) or soft, creamy varieties that can be cut by the wine's sharp acidity.
