Les Bouffants shimmers with a pale straw colour and subtle green highlights. The nose is intensely aromatic and complex, presenting a bouquet of zesty lime, grapefruit, and green apple, alongside notes of boxwood, elderflower, and fennel. On the palate, the wine is energetic and well structured, balancing a silky texture with crisp acidity and flavours of ripe pear, white peach, and nectarine. It features a distinctive flinty minerality and a long, saline finish. This 100% Sauvignon Blanc is sourced from a mythical south-facing limestone hillside in Chavignol known for its early ripening potential. The wine has an ABV of 12.5% and is fermented and aged in a combination of 600 litre demi muids and 350 litre oak cigars for over one year. This wine is produced using organic practices.
