Wine Description

This wine is a straw-yellow colour and is crafted from 100% Chardonnay grown on fossil-rich Kimmeridgian clay soils. The aromatic profile features restrained citrus and stone fruit notes layered over a signature chalky, mineral base. On the palate, the wine is clear, linear, and well-balanced, delivering fresh lemon flavours underpinned by a fine minerality and a hint of salinity. While mostly fermented in stainless steel to maintain purity, the 'Motte style' often includes a small addition (around 10%) of oak-aged wine to provide extra richness and depth. The wine undergoes malolactic fermentation and is matured on its lees before bottling, resulting in an ABV of 12.5%. The estate is HVE Level 3 certified, confirming its commitment to sustainable viticulture and biodiversity.
