Billecart Salmon Cuvee Nicolas Francois 2012
Introduction
The Billecart-Salmon Cuvée Nicolas François 2012 is the latest release of the estate's prestige vintage bottling, marking the first release of this cuvée since the legendary 2008 vintage. Named in tribute to the house’s founder, the 2012 emerges from a growing season that was initially challenging due to frost and hail but was rescued by a warm, sun-drenched August and September. This vintage is widely regarded as one of the greatest of its decade, offering a broader and more demonstrative profile than the tightly coiled 2008.
Wine Description
The 2012 vintage reflects the natural radiance and ripeness of the year, balanced by Billecart-Salmon’s signature mineral tension and precision.
Varietal Composition: A blend of 60% Pinot Noir and 40% Chardonnay. The fruit is sourced from 83% Grand Cru and 17% Premier Cru vineyards. Pinot Noir originates from Mareuil-sur-Aÿ, Verzenay, and Aÿ, while the Chardonnay is sourced from the Côte des Blancs (Le Mesnil-sur-Oger, Chouilly, and Avize).
Aromatic Profile: The bouquet is rich and expansive, featuring aromas of candied lemon, honeysuckle, and ripe peach. It is complemented by mature notes of beeswax, orange zest, roasted hazelnuts, and a hint of vanilla bean.
Palate and Body: On the palate, the wine is full-bodied, ample, and enveloping. It offers a layered core of orchard fruits, such as pear and apricot, alongside savory nuances of baking spice and toasted brioche. The mouthfeel is defined by a creamy mousse and a deep, resonant texture.
Structure: Despite the warmth of the 2012 season, the wine maintains a mouthwatering acidity and a firm, chalky structure. The finish is remarkably long, tense, and saline, showing a "peacock's tail" display of complex flavors.
Winemaking and Aging: Following the house's traditional methods, 17% of the blend was vinified in oak barrels to add depth and breadth. The wine underwent partial malolactic fermentation (with approximately 20% blocked to preserve freshness) and was aged on its lees for 10 years (120 months) before being disgorged in May 2023.
ABV: 12.5% to 13.2%.
Dosage: Extra Brut (3.8 g/L), reflecting the house's move toward lower dosages to emphasize terroir transparency and the richness of the vintage.
