Wine Description
This refined Champagne presents a pink copper colour with hints of raspberry that evolves toward salmon with extended aging. The nose is complex and evolving, opening with initial aromas of redcurrant and red fruits that transition into morello cherry, wild strawberry, and violet as it breathes. On the palate, it reveals a creamy texture and captures red fruits at their peak freshness, balanced by racy acidity and an elegant, fine boned core. The finish is clean, bright, and remarkably long with persistent citrus and mineral notes. The blend is predominantly first pressing Pinot Noir—produced through both quick pressing for a white juice and prolonged maceration for a red wine—with a 'secret' amount of Chardonnay added for vivacity. It has an alcohol content of 12% ABV and is aged for a minimum of three years on the lees followed by at least five months after disgorgement. While the winery is certified organic and avoids the use of weedkillers or pesticides, this specific cuvée is often noted for its sustainable viticulture practices. The optimal drinking window is over the next 1 to 5 years.
