The nose is open and fragrant, featuring an inviting bouquet of citrus blossom, white nectarine, and lemon sorbet, complemented by subtle nuances of apple pie crust, toasted cashew, and arrowroot biscuits. On the palate, the wine is medium bodied and vibrant, showcasing flavours of fresh peach, mango, and green apple balanced by a creamy texture and a 'mouth-watering' natural acidity. It is characterized by its elegant structure, featuring a fine saline minerality and a persistent finish with a delicate chalky texture. This 100% Chardonnay was 100% wild fermented and matured for approximately 8 months in French oak barriques (with a small percentage of new oak) and large format foudres. The ABV is 12.5%, and the winery utilizes organic and sustainable farming practices. The optimal drinking window for this vintage is from now through 2031.
