The cool, coastal climate of Niigata allows for a stable maturation, while the porous Mizunara wood imparts the characteristic oriental spice that distinguishes the Shinobu range from traditional Highland or Speyside malts.
Whisky Description
This whisky displays a deep mahogany gold color. On the nose, it is notably sweet and woody, offering aromas of honey, maltose, and citrus peel, accompanied by the distinct sandalwood scent of Mizunara oak. The palate is smooth and medium-bodied, featuring flavors of buttery toffee, roasted nuts, and a touch of dried ginger. The ten years of aging provide a well-integrated structure where the sweetness of the malt balances the spicy, peppery notes of the wood. The finish is long and slightly dry, leaving behind a lingering taste of incense, clove, and sweet oak. It is bottled at 43% ABV and is non-chill filtered.
