Under the expertise of Master Distiller Sergio Cruz, this blanco is a "pure terroir" play, designed to showcase the bright, floral, and mineral characteristics of Highland (Los Altos) agave. It is famous among aficionados for the "Mozart Method," a fermentation process where classical music is played to the open-air tanks to influence yeast activity, alongside its unwavering commitment to additive-free production.
Spirit Description
The Blanco is unaged and bottled immediately after double distillation to preserve the raw energy of the agave. It presents a crystal-clear appearance with a noticeably silky viscosity.
Nose: It opens with a punch of sweet cooked agave and bright citrus (lime and grapefruit zest). These are layered with an airy minerality—often described as "wet stone" or "cement"—and a floral hint of springtime grass and mint.
Palate: The texture is clean and slightly oily. The entry is sweet and agave-forward, transitioning into a complex mid-palate of white pepper, herbal undertones, and a touch of tropical fruit like melon or pineapple.
