The brand is still operationally based in the Okanagan, though, and this Sonoma County Cabernet Sauvignon shows some consistency with the Quails' Gate wine-making style. The fruit is ripe and dark, with ample oak spice and toast, while maintaining the inherent structure. The firm, medium-grained tannins lead to a decidedly dry finish. Decant and serve with a beef roast.
