Their winemaking philosophy blends traditional Italian Rosso Vermouth techniques—drawing on formulas from long-forgotten 19th-century houses—with a modern, empirical approach. This unique methodology involves separately extracting the flavours from thirty-two different botanicals before blending them into a continuously aged Solera system, ensuring precision and consistency in every bottle.

  • Colour: A rich, deep red or Rosso hue, consistent with traditional Italian sweet vermouth.

  • Aroma: The nose is lovely, aromatic, and savoury, hinting at the complex botanical blend. Additional notes of plums, figs, and oranges are present, layered over dark spice and brown sugar.

  • Palate: The mouthfeel is notably very wine forward, indicating a strong character from its base of fortified blueberry-blossom mead. The judges noted it as 'very ripe and delish', balanced by a pleasant herbalness and spicy accents of white pepper, cloves, and star anise.
