Clonakilty Distillery Bordeaux Cask Irish Single Malt
Bordeaux Cask Irish Single Malt originates from the West Cork region of Ireland, specifically the coastal town of Clonakilty. It is produced by the Clonakilty Distillery, a family owned operation founded by the Scully family, who have farmed the same coastal land for nine generations. The distillery is situated on the Wild Atlantic Way and is known for its commitment to sustainability and its unique maritime maturing warehouse where the ocean air influences the aging process.
Spirit Description
This premium whiskey is a double distilled single malt that has been finished in red wine casks from the Château La Cardonne estate in the Bordeaux region of France. It presents a deep golden to tawny appearance with a medium to full body. The aroma is a complex bouquet of soft oak, honey, and floral plum, accented by notes of fresh berries. On the palate, it delivers a rich array of flavours including oak spice, cinnamon, and clove, balanced by sweet vanilla and nutmeg. The finish is long and warming, characterized by drying spices, vanilla cream, and lingering hints of blackcurrants and raspberries. It is bottled at 46% ABV and is non chill filtered to preserve its natural character.
Food Pairing
The spiced fruit profile and oak influence of this single malt make it a sophisticated partner for a variety of dishes. It pairs exceptionally well with creamy, soft cheeses such as Brie or Camembert, which complement its vanilla notes. For a savoury pairing, roasted poultry or a classic steak sandwich with a hint of horseradish will stand up to the whiskey's spicy character. It also serves as a delightful accompaniment to fruit based desserts, particularly strawberry shortcake or a raspberry tart, which echo the red fruit notes from the Bordeaux cask finish.
