The winery's philosophy combines state-of-the-art technology, such as a four-level gravity-flow system, with environmental stewardship; they are famous for their on-site solar energy initiatives and their namesake conservation program for the burrowing owl.
Wine Description
The Burrowing Owl Chardonnay presents a clear, pale lemon-gold colour. The sensory profile is complex and well-integrated, featuring aromas of ripe pineapple, lemon zest, and cantaloupe, layered with rich notes of toasted hazelnut, vanilla, and honey. On the palate, the wine is medium to full-bodied with a creamy, luscious texture derived from extensive lees stirring (batonnage) and partial malolactic fermentation. It displays balanced flavours of tropical fruit and crisp apple, supported by a refreshing acidity and a lingering, buttery finish with hints of spice and wet stone.
