Five of Diamonds is the cornerstone Pilsner from Lacombe’s Blindman Brewing, widely considered one of the finest examples of the style in Western Canada. While many craft breweries chase the latest trends, Blindman used this beer to prove their technical mastery of the "simplest" and most difficult style to brew. It is a Pilsner that honors the traditions of the Old World specifically the crispness of a German Pilsner and the bready soul of a Czech Budvar while utilizing the world-class barley grown right in Blindman's backyard. It is designed to be the "everyday" beer for the discerning drinker.

Beer Description

Five of Diamonds pours a brilliant, sparkling straw-gold with a dense, snow-white head that persists with remarkable "meringue-like" stability.

Aroma: The nose is clean, elegant, and "bright." It leads with dominant notes of freshly baked bread and honeyed cracker, followed by a sophisticated floral and herbal spicy scent from noble hops. There is a distinct "lager-clean" quality, free of any fruity esters, smelling purely of high-quality grain and field flowers.

Palate: On the tongue, it is light-to-medium bodied with a crisp, high-carbonation "snap." It leads with a delicate malty sweetness and toasted grain, which is almost immediately balanced by a firm, refreshing bitterness. The finish is exceptionally dry and "short," meaning the flavor cleanses from the tongue quickly, leaving only a faint, pleasant herbal tea note.

Profile: It sits at a perfectly balanced 4.8% ABV and a moderate bitterness of approx. 30–35 IBU, providing a much more structured "bite" than a standard domestic lager.

Technical Notes: This beer is a showcase of Alberta Heritage Select malt, a premium base malt that provides a richer, more complex grain character than standard 2-row. It is brewed using traditional European Noble Hops (likely Loral or Hallertau Tradition) and undergoes a long, cold lagering period. This patient maturation process allows the yeast to drop out completely, resulting in its signature diamond-like clarity and ultra-clean fermentation profile.
