Blindman Dream Machine Mexican Lager 355 ml - 12 Cans
Dream Machine Mexican Lager is a seasonal standout from Lacombe’s Blindman Brewing, one of Alberta’s most respected and innovative craft breweries. While many "Mexican-style" lagers are associated with thin, mass-market imports, Blindman approaches this style with a focus on artisanal quality and regional ingredients. It is designed to be the ultimate "crushable" lager inspired by the sun-drenched beaches of Mexico but rooted in the high-quality barley of the Canadian prairies. It is a beer that prioritizes clean fermentation and a specific, refreshing "snap."
Beer Description
Dream Machine pours a brilliant, crystal-clear pale straw with a light, frothy white head and fine, lively carbonation.
Aroma: The nose is clean, bright, and inviting. It leads with dominant notes of sweet flaked corn and fresh-cracked grain, followed by a subtle, floral hop scent. There is a faint, lime-like citrus quality in the background that suggests a refreshing "zing" even before the first sip.
Palate: On the tongue, it is light-bodied with a crisp, effervescent mouthfeel. It leads with a delicate corn-chip sweetness and bready malt, which is quickly balanced by a very mild, herbal bitterness. The finish is exceptionally clean and dry, with a refreshing mineral quality that scrubs the palate.
Profile: It sits at a highly sessionable 4.5% ABV and a low bitterness of 15 IBU, ensuring maximum drinkability without palate fatigue.
Technical Notes: The "Mexican" character of Dream Machine comes from the addition of flaked corn (maize) to the mash. This adjunct lightens the body of the beer and provides a characteristic sweetness that distinguishes it from a traditional European Pilsner. Blindman utilizes a clean-fermenting lager yeast and an extended cold-conditioning period to ensure the beer is "bright" (clear) and free of any heavy esters or off-flavors.
