Almaviva 2021
Almaviva 2021 originates from Chile, within the Puente Alto subregion of the Maipo Valley. This estate is a prestigious joint venture between Baroness Philippine de Rothschild of Château Mouton Rothschild and Eduardo Guilisasti Tagle of Viña Concha y Toro, established in 1996. The winery's philosophy is rooted in the French 'château' concept, focusing on a single exceptional terroir and a dedicated technical team to produce a wine that blends Hispanic and French traditions.
Wine Description
The 2021 vintage of Almaviva displays a deep, dark ruby colour with a medium to full body. The sensory profile is highly aromatic and complex, featuring an intense nose of ripe blackberries and raspberries, complemented by notes of cedar, tobacco, coffee, and subtle hints of violet. On the palate, the wine is elegant and dense, delivering a concentrated core of fruit supported by fine, polished tannins and a refreshing acidity. The finish is exceptionally long and balanced, highlighting the wine's precision and structural depth.
Varietal Composition: 71% Cabernet Sauvignon, 22% Carménère, 5% Cabernet Franc, and 2% Petit Verdot.
Stylistic Notes: The wine is celebrated for its purity and tension, having been aged for 20 months in French oak barrels (71% new) to refine its complex layers.
ABV: 15%.
Organic Status: Not specified as organic; the winery utilizes state of the art technical facilities and gravity fed processes to maintain the integrity of the fruit.
Food Pairing
The robust structure and sophisticated fruit profile of Almaviva 2021 make it a versatile partner for intense savoury dishes.
Meats: Pairs excellently with grilled Wagyu beef, herb crusted rack of lamb, or roasted game meats.
Savoury and Rich: Suggested pairings include braised short ribs with a red wine reduction or dishes featuring earthier flavours like truffles and wild mushrooms.
Cheese: Complements mature and nutty firm cheeses such as aged Comté or extra old cheddar.
Dessert: Matches well with dark chocolate desserts, particularly those with a 70% to 85% cocoa content.
Vintage Quality
The 2021 vintage in Puente Alto is regarded as one of the best in the estate's history due to unusually cool and humid conditions. After several years of drought, a massive rainstorm in January refilled water reserves, which, combined with a mild summer, allowed for slow ripening and excellent flavour development. These conditions resulted in a harvest that was three weeks later than the previous year, allowing the fruit to achieve remarkable aromatic intensity and a vibrant, fresh acidity. The winemaker's skill in managing this cooler season produced a wine with superb balance and significant ageing potential.
